The Hidden Traps

  • Fish Sauce (Nam Pla/Nuoc Mam): This is the default salt of Southeast Asia. A dish might have no pieces of meat, but it *will* have fish sauce unless you explicitly ask to omit it.
  • The "Jay" (เจ) Sign: In Thailand, look for yellow flags/signs with red writing. This denotes Buddhist vegan food: zero meat, seafood, dairy, or eggs.
  • Lard: Many street woks are greased with pork fat (lard). In Vietnam, specify *\"chiên bằng dầu thực vật\"* (fry in vegetable oil).
